I record three hour shows and 18 tracks.  I haven't even begun to scratch the capacity of my 2T drive, yet.  You should be fine.  I also have intermission music on my drive, so I actually stop the recording process between sets so I can play the intermission music, then start up the recording again when we're back on stage.  One final note...  I've yet to had any trouble with tracks syncing up or anything like that.  Smooth sailing so far.  I've recorded close to ten shows now.
