We have limited sound personel at our church, and so I would like to be able to connect to the mixer remotely during rehearsal and make requested adjustments from home when needed. For instance, Singer A wants a bit more click in her monitors... I know latency will be bad, but I just want to see if it works. :)

Well that's an interesting idea! You could just put it in the DMZ and give the world access =)
I'll try to get some time and do a port scan and see what is listening, or use wireshark and see what is being used.
Who knew that being forced to shelter-at-home would keep me so busy!?
